Oddbird wines are crafted exactly like traditional wines:
• carefully chosen grape varieties
• fermentation and slow aging (up to 12 months)
• natural development of aroma, structure and complexity

Only when the wine has fully matured is it gently dealcoholized.

3. World-leading scientific expertise

Oddbird leads the world’s largest research consortium in dealcoholized wine. From their research centre in Alsace, winemakers, sensory scientists and universities collaborate to study aroma preservation, mouthfeel, structure and stability.

Their head of product development, Dr. Mihaela Mihnea (PhD), has over 40 peer-reviewed publications and more than 50 global conference presentations. Under her leadership, Oddbird has developed sophisticated methods to retain grape integrity, balance and depth even after alcohol is removed.

4. A patented, gentle dealcoholization method

Oddbird uses a low-temperature vacuum distillation process, which protects delicate aromas and volatile compounds far better than traditional high-heat methods. After distillation, the original aromas are reintegrated, resulting in a wine that keeps its full terroir expression, just without the alcohol.

5. A cultural shift toward mindful enjoyment

For Moa Gürbüzer, the mission began as a social worker. For 20 years she saw how alcohol shaped lives, families and society. Oddbird was born from her recognition that we can create a new drinking culture, one that is beautiful, inclusive and intentional.
